Yeah…well if you’re like me, navigating your busy lifestyle and having experienced one too many Pinterest disasters, you want something easy. So let me share with you my sort of secret, semi-homemade recipes that will help you show up to next weekend’s summer bash with an A+ spread that took you no time to pull together.
Guac it up
You can never really go wrong with guacamole. Creamy Avocado + Salty Chips = The Ultimate Summer NOMZ. That’s why my go-to party appetizer is fresh guacamole with tortilla chips. The first ingredient you will need for some kick a$$ guacamole is some ripe avocados. To tell if my avocados are ripe, I like to use the stem test. All you have to do is rip the small stem off of the end of the avocado. If you find green underneath, your avocado is perfect. If the stem doesn’t come off that means your avocado needs a few more days to ripen. After your avocados are ripe and ready to go, all you need the special ingredient: Frontera Guacamole Mix. This stuff is BOMB. With the taste of smoky tomatillo chiles and nutty garlic, you will have people thinking you were taught by Rick Bayless, himself! All you have to do is mix both of your ingredients together, pair with tortilla chips and voilà, you’re the life of the fiesta.
Spilling the tea
For a refreshing, sweet treat at is perfect for those summer nights, I recommend my mom’s notorious Strawberry Cheesecake Dip. Just two ingredients make this finger-food down-right irresistible – Marshmallow Fluff and Whipped Cream Cheese. All you need to do is stir these two ingredients together, tasting as you go in order to get the flavor you desire. I usually use the entire container of cream cheese with equal parts Marshmallow Fluff for the perfect combination of tangy and sweet. Pair it with some fresh strawberries and you have the perfect summer-night bite.
Taste of summer
To counterbalance that sweetness with a bright summer salad, I like to take a quick trip to Italy with some tomato and mozzarella goodness. With pre-sliced mozzarella, all I have to do is slice some juicy beefsteak tomatoes, add a little basil and balsamic glaze and within 10-minutes I’ve traveled all the way to Florence. This salad is light, fresh, colorful and easy to split up and share among friends, making it the perfect summer salad.
