When spring hits New York City, everyone emerges from their stuffy apartments looking very similar to how I assume bears look coming out of hibernation. Squinting at the sun, guessing how long it’s been since they got a proper dose of Vitamin D. Also similar to bears post-hibernation, New Yorkers take no time to adjust to the warm-weather by indulging in a meal above all meals. In the case of us New Yorker’s, we call that meal brunch.

However, because brunch is such a spring-time staple, those reservations come few and far between. That’s why I like to kick off the new season by throwing my own brunch. I invite all of my friends over to my apartment, open the windows to let the breeze flow in, and match the good weather outside with good food and better drinks inside. See below for my must-have recipes for this classy(ish) spring-time affair.

Pancakes

Semi-Homemade Lemon Poppyseed Pancakes

This recipe is one of my favorites because 1) it is incredibly quick and easy to make and 2) the bright lemon flavor balances out the sweetness of this breakfast treat perfectly. It simply screams spring, and it’ll leave your guests wanting more and more.

What You’ll Need:

Instructions:

  1. Prepare your favorite pancake mix as outlined on the box.
  2. Add the sugar.
  3. Add the grated lemon zest and juice from the fresh lemons.
  4. Add the poppy seeds and stir.
  5. Cook the pancakes as directed on the box. That’s it! So, so simple.

Pro Tip: If you’re feeling fancy, mix together some powdered sugar, a few tablespoons of milk and a squeeze of fresh lemon juice for a sweet, citrusy glaze that pairs perfectly with these pancakes.

Avocados

Avocado Toast with Goat Cheese

I like to consider myself an avocado toast aficionado. I will eat it just about anytime, anywhere with just about any toppings. However, my personal favorite is avocado toast, topped with goat cheese. The tangy flavor of the goat cheese compliments the creamy avocado so well. Plus, since each slice makes a perfect single serving. It is one of the best dishes to serve hungry guests. 

What You’ll Need:

Directions:

  1. Slice open your avocados and remove the pit. Place all of that green, creamy goodness in a bowl. Mash it with a fork.
  2. Take your toasted bread and cover each slice with an equal amount of mashed avocado, making sure to cover the whole slice.
  3. Sprinkle each slice with some crumbled goat cheese, olive oil, red pepper flakes for a nice kick and sea salt to taste.

Pro Tip: If you aren’t a goat cheese fan, you can swap it out for some burrata cheese or scrambled eggs.

Breakfast Margarita

What really is brunch without a nice cocktail, right? I find that the Breakfast Margarita is the perfect crowd pleaser. The tequila brings the party, while the sparkling wine makes you feel happy from the inside out.

  1. Grab your cocktail shaker and jigger.
  2. Fill your mixer with ice.
  3. Add the tequila, lime juice, agave and wine.
  4. Shake, shake, shake.
  5. Pour into a champagne flute and garnish with some fresh lime.
